Directions
The most renowned Indian Street Food “Pav Bhaji” is made up of a delicious medley of spices, mashed veggies, topped with a blob of butter, coriander leaves, and lemon juice. In a pressure cooker – add potatoes, lauki, cauliflower and green peas along with a cup of water. Pressure cook the vegetables until cooked. |

Strain the veggies and spare the water aside for later use. |

Heat butter and oil in a pan. Once the butter melts add Wonder Mera Wala Cumin Seeds and allow it to crackle. |

Add chopped onions. Saute it until soft and translucent. Add garlic and green chilies. Stir it for 3-4 seconds on medium flame, do not burn. |

Add capsicum and tomatoes. Cook until tomatoes softens well and starts releasing the butter from the sides of the pan. |

Add the Wonder Mera Wala Pav Bhaji Masala, Wonder Mera Wala Kashmiri/Kumthi Chilly Powder, and salt. Mix everything well. |

Add cooked veggies and 1/2 cup of the reserved water. Mash the veggies with the help of masher until they blend with the masala. |

Let the bhaji simmer on low heat for 10 minutes. Stir it occasionally. Add water, if the bhaji looks dry. Cook for 3-4 minutes. Add Wonder Mera Wala Kasuri Methi. |

Squeeze in Lemon juice and then remove the pan from heat. Garnish it with coriander leaves. |

To toast the pav, melt butter in a pan on medium heat. Sprinkle a pinch of Wonder Mera Wala Pav Bhaji Masala on top of the butter and then place the buns on the pan. Cook on both the sides till golden brown. |

Serve the hot Pav Bhaji with a blob of butter along with 2 toasted pavs, chopped onions, lemon wedge, and roasted papad. |
